Our Pioneer blend is a custom combination of 60% chuck. 20% brisket and 20% ribeye cuts. The lean and fat percentages are 75% (lean) and 25% (fat). This is a winning combination that creates the signature crust and flavor you expect from a gourmet smash burger.
